Come e quando nasce la Caprese?
Il rosso del pomodoro, il bianco della mozzarella di bufala ed il verde del basilico. Tre prodotti tipici della cucina nostrana per celebrare l’Italia con i colori della sua bandiera.
Nasce semplicemente così uno dei piatti più apprezzati e gustati in tutto il mondo, grazie all’idea di un muratore dell’isola di Capri (da cui prende il nome) che, nel secondo dopoguerra, volle celebrare il Tricolore farcendo con questi ingredienti il suo panino per la pausa pranzo.

Il re dei sughi italiani: sua Maestà il Ragù
Il Ragù alla Bolognese, il piatto della domenica per eccellenza, è un condimento ricco e saporito a base di carne macinata e salsa di pomodoro.
Nasce a Bologna, in Emilia-Romagna, ma è uno dei condimenti tipici della tradizione italiana, tanto da essere unanimemente considerato “Il Re dei sughi”.
La ricetta originale prevede l’utilizzo di ingredienti specifici (manzo e maiale), dosi calibrate e particolari tempi di cottura (2-3 ore).
Dal Ragù alla Bolognese sono poi nate numerose sfumature ed interpretazioni che caratterizzano moltissimi piatti della cucina nazionale.

Un matrimonio dal passato “difficile”: l’origine della pasta al pomodoro
Pensi all’Italia e pensi alla pasta al pomodoro. Il simbolo per eccellenza della tradizione culinaria italiana, tuttavia, ha avuto un passato “difficile”.
Il pomodoro, infatti, fu importato dalle Americhe nel XV secolo e, per molti anni, venne adottato come pianta ornamentale dai frutti velenosi.
Sebbene i primi tentativi di sdoganarlo si registrarono alla fine del ‘500, fu la città di Napoli a favorire l’uso del pomodoro in cucina, grazie alla diffusione della ricetta dei “Maccaroni alla Napolitana” nei primi anni nel 1800.
Il piatto ebbe un successo tale da rappresentare tuttora la norma per realizzare il Ragù alla Napoletana.

Perché le Polpette alla Romana sono “uniche”?
Le Polpette alla Romana sono dei manicaretti tipici della tradizione gastronomica della Capitale.
Ogni regione d’Italia si distingue per la sua peculiare interpretazione e, per quel che concerne Roma, la loro particolarità consiste nell’utilizzo del lesso al posto della carne macinata, che conferisce un sapore particolare alla preparazione, assieme al formaggio (tipicamente di origine ovina).

Dai Romani a oggi, passando per Boccaccio: la storia del raviolo
La sua semplicità e la sua bontà gli hanno consentito di arrivare dai Romani sino ai nostri giorni. Infatti, pare che il progenitore dell’odierno raviolo sia stato confezionato da un cuoco romano, Marco Gavio Apicio, con la sua “Torta Apicia”.
Tuttavia, seppur non sia ben chiara l’origine del termine “raviolo”, la versione più accreditata vuole che questo sia stato coniato nella città di Gavi Ligure, grazie al cognome del cuoco, tal “Ravioli”, che inventò questa pasta ripiena.
Si tratta dell’unica pasta ripiena di cui si abbiano notizie sin dal XII secolo.
La sua diffusione fu tale che, nel ‘300, Boccaccio ne esaltò la bontà nella sua opera più celebre: il Decamerone.

La vera storia della Carbonara
Si narra che la sua origine risalga al 1944. Raffaele Gualandi, un cuoco bolognese, fu ingaggiato dalle truppe alleate per preparare un pranzo in occasione dell’incontro tra le Armate inglesi e americane, nella Riccione appena liberata.
Il piatto ebbe un successo tale che Gualandi divenne il cuoco delle truppe alleate a Roma. Egli lavorò nella Capitale dal settembre 1944 all’aprile 1945 e proprio durante questo periodo la carbonara diffuse la sua gustosa fama nella Città Eterna.
Qual è la differenza tra guanciale e bacon?
La tradizione romana prevede l’utilizzo del guanciale, ottenuto dalla lavorazione della guancia di maiale, stagionato per almeno 9 mesi e condito esternamente con sale e pepe. Il guanciale del Lazio, il più indicato per la preparazione della carbonara, prevede anche l’aggiunta di aglio, salvia e rosmarino.
Il bacon (la versione anglo-americana della pancetta), invece, si può ottenere da parti differenti del suino, come la schiena o la spalla. Inoltre, viene sottoposto a processi di conservazione (in salamoia o a secco), differenti dalla pancetta (che viene cotta al vapore o affumicata).

Ecco tutto che quel che c’è da sapere
L’Amatriciana prende il suo nome dalla città di Amatrice. Nel borgo, popolato principalmente da pastori e agricoltori, questo piatto divenne una gradita consuetudine e le sue prime notizie “ufficiali” risalgono al 1816.
Dai pascoli e dalle campagne, successivamente, in molti si trasferirono nella Capitale per cercare fortuna, anche aprendo osterie.
Così come accadde ad Amatrice, con il tempo (e grazie al suo gusto) l’amatriciana fece immediatamente presa sulla popolazione, tanto da divenire una delle colonne della tradizione culinaria romana.

L’origine del Pesto alla Genovese
Sebbene la prima vera ricetta risalga al 1852, la tradizione si perde nei secoli, sino ai tempi di Virgilio che, in epoca romana, descrisse l’utilizzo di una salsa chiamata “moretum” a base di verdure, aglio e formaggio.
Nel tempo, la ricetta del pesto si è evoluta e raffinata, fino ad arrivare alla versione attuale.
Secondo il disciplinare, esso si ottiene pestando foglie di basilico di Prà con pinoli, aglio e sale. Solo al termine della preparazione vengono aggiunti i formaggi (“Fiore Sardo” e “Parmigiano Reggiano”) e l’olio extra-vergine d’oliva.

Com’è nata la Cacio e Pepe?
La pasta Cacio e Pepe affonda le sue radici nella più antica tradizione culinaria romana.
Essa veniva consumata dai contadini e dai pastori dell’epoca che portavano nelle loro bisacce i tre semplici ingredienti che la compongono: spaghetti essiccati, pepe nero (utilizzato per insaporire i piatti) e pecorino.
La leggenda narra che gli osti solevano servire una Cacio e Pepe molto “secca” ai loro clienti per far sì che avessero bisogno di più vino del solito per mandar giù la pasta: così più Cacio e Pepe mangiavano, più vino bevevano!

Focaccia, pinsa e pizza: quali sono le principali differenze?
A differenza della pizza, la focaccia è tipicamente (anche se non necessariamente) più alta della classica pizza, oltre ad essere spesso e volentieri bianca. Ricorda, dunque, un “pane basso”.
La pizza, invece, è più bassa e variamente condita.
La pinsa, interpretazione tipicamente romana della sua “cugina” napoletana, si differenzia da quest’ultima per quel che concerne i tempi di lievitazione (superiori alle 24 ore nella pinsa, mentre la pizza “riposa” di meno) e la quantità d’acqua (nella pinsa c’è più acqua rispetto alla pizza).

La Regina delle pizze: perché si chiama Margherita?
Seppur al Gran Caffè Rossetti si serva la classica pinsa romana, ci sembra ricordare l’origine del piatto (forse) più famoso della tradizione culinaria italiana.
La leggenda narra che, nel 1889, Raffaele Esposito, cuoco della pizzeria Brandi, fu convocato dalla Regina d’Italia in persona, Margherita di Savoia, per realizzare delle pizze da servire ai reali.
Fra le tre proposte di Esposito, la Regina Margherita apprezzò particolarmente la pizza con pomodoro, mozzarella e basilico, i cui ingredienti ricordavano proprio il tricolore italiano.
Visto il gradimento della sovrana, il piatto venne immediatamente ribattezzato Margherita in suo onore.
